- 2 ¼ c canned coconut milk unsweetened
- ¼ c granulated sugar
- 3 tbsp cornstarch
- 1 ½ tsp dried butterfly pea flowers
- ¼ tsp rosewater
- 2 tbsp lemon juice
- 2 tbsp chopped cashews for garnish
Instructions
- In a small pot, whisk together the coconut milk, granulated sugar, cornstarch, and rosewater.
- Add the dried butterfly pea flowers to the mixture and place pot over medium heat.
- Allow mixture to come to a simmer and cook for 10-15 minutes or until the mixture starts to thicken.
- Add lemon juice to the pudding and mix until combined. Strain pudding through a sieve to remove the butterfly pea flowers.
- Allow to cool for 2 hours before serving in individual bowls. Garnish with chopped cashews if desired.
