When you told Layla about that feeling, she showed a mixed expression of joy and regret – “Th-That’s great! Ah, if only it could work on me too.””

Extravagant Slumber is a dish that you can make in Genshin Impact by cooking Rose Custard with Layla so I wanted to keep the rose flavor in the pudding by using rosewater.  The recipe I made is vegan as it uses coconut milk to have a brighter contrast for the butterfly pea flower as a natural coloring instead of relying on artificial dyes.  One fun thing that you can try with butterfly pea flower, and the secret to this recipe, is adding an acid component – in this case lemon juice – to add flavor and change the color of the butterfly pea flower from a blue color to purple.  Cashews add a nice crunch but can be substituted or omitted if desired.

Ingredients

  • 2 ¼ c canned coconut milk unsweetened
  • ¼ c granulated sugar
  • 3 tbsp cornstarch
  • 1 ½ tsp dried butterfly pea flowers
  • ¼ tsp rosewater
  • 2 tbsp lemon juice
  • 2 tbsp chopped cashews for garnish

Instructions

  • In a small pot, whisk together the coconut milk, granulated sugar, cornstarch, and rosewater.
  • Add the dried butterfly pea flowers to the mixture and place pot over medium heat.
  • Allow mixture to come to a simmer and cook for 10-15 minutes or until the mixture starts to thicken.
  • Add lemon juice to the pudding and mix until combined. Strain pudding through a sieve to remove the butterfly pea flowers.
  • Allow to cool for 2 hours before serving in individual bowls. Garnish with chopped cashews if desired.
