Extravagant Slumber
Rosewater and lemon flavored pudding

- 2 ¼ c canned coconut milk unsweetened
- ¼ c granulated sugar
- 3 tbsp cornstarch
- 1 ½ tsp dried butterfly pea flowers
- ¼ tsp rosewater
- 2 tbsp lemon juice
- 2 tbsp chopped cashews for garnish
In a small pot, whisk together the coconut milk, granulated sugar, cornstarch, and rosewater.
Add the dried butterfly pea flowers to the mixture and place pot over medium heat.
Allow mixture to come to a simmer and cook for 10-15 minutes or until the mixture starts to thicken.
Add lemon juice to the pudding and mix until combined. Strain pudding through a sieve to remove the butterfly pea flowers.
Allow to cool for 2 hours before serving in individual bowls. Garnish with chopped cashews if desired.
