Guild Wars 2 is one of my favorite games and recently a new expansion, End of Dragons, came out.  In the story your playable character talks to a fisherman.  He reminisces about how his family is from Tyria and mentions carrot bread that his father used to make made, although he says the recipe was lost after he passed away.

 I did the first thing I could think of and checked to see if it was a craftable item in game and, unfortunately, it is not an item in the game.  So I did the next best thing and decided to create my own idea of what the carrot bread would look like in-game.  I chose to make an easy carrot bread recipe and mixed in chopped crystallized ginger for a pop of flavor throughout the loaf.

 

Carrot Bread

A delicious spiced loaf with carrots and ginger.

Ingredients

  • 1 ½ c (188 g) all-purpose flour
  • 1 ½ tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp ground nutmeg
  • ½ tsp baking soda
  • ½ tsp baking powder
  • c (56 g) crystallized ginger chopped
  • ½ c (100 g) brown sugar
  • ¼ c (50 g) granulated sugar
  • ½ c (125 mL) oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 ½ c (252 g) carrots grated, squeezed to remove excess water

Instructions

  • Preheat oven to 350°F. Grease a 9x4" loaf pan.
  • In a mixing bowl, combine the flour, cinnamon, ground ginger, nutmeg, baking soda, baking powder, salt, and chopped crystallized ginger.
  • In another bowl mix together the sugars, oil, eggs, and vanilla. Stir in the grated and drained carrots,
  • Add dry ingredients and mix until just combined. Pour batter into greased loaf pan.
  • Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  • Allow to cool before slicing and serving warm or cooled.
