Preheat oven to 350°F. Grease a 9x4" loaf pan.
In a mixing bowl, combine the flour, cinnamon, ground ginger, nutmeg, baking soda, baking powder, salt, and chopped crystallized ginger.
In another bowl mix together the sugars, oil, eggs, and vanilla. Stir in the grated and drained carrots,
Add dry ingredients and mix until just combined. Pour batter into greased loaf pan.
Bake for 45-50 minutes or until a toothpick inserted comes out clean.
Allow to cool before slicing and serving warm or cooled.
