While shopping I came across some pale pink and yellow colored raspberries and immediately thought to make this drink since it matched the in-game art so well. This drink is made with a homemade raspberry, mint, and lime syrup and has a sweet berry flavor and can be adjusted for desired sweetness by adding more or less syrup to the club soda. It is a light non-alcoholic drink that is best enjoyed chilled and would be great on a hot summer day. Raspberries that are a regular red color will give a darker, more purple color in the final drink.

Berry & Mint Burst

Ingredients

Raspberry and Mint syrup

  • ½ c (118 g) water
  • c (67 g) sugar
  • ½ c (63 g) rosé raspberries
  • 1 tsp (10 mL) lime juice
  • 4-5 mint leaves ripped

Berry & Mint Burst

  • 3 tbsp (45 mL) raspberry and mint syrup
  • 3 tbsp (45 mL) Blue curaçao non-alcoholic
  • ¾ c (177 mL) club soda
  • ice
  • mint leaf optional, for garnish

Instructions

Raspberry and Mint syrup

  • In a medium sized pot, combine water, sugar, raspberries, lime juice, and mint leaves.
  • Bring to a simmer and cook for 5 minutes.
  • Strain into a clean air-tight jar and allow to cool to room temperature before refrigerating.
  • Keep syrup refrigerated until use and use within 1 week.

Assemble the Berry & Mint Burst

  • Add the ice and club soda to a glass, add the syrup and blue curaçao.
  • Garnish with mint leaf if desired.

Notes

  • Regular raspberries can be used but the color will be different.
