Pumpkin Pie

Food from Minecraft has been on my list of food to make for a while, so I decided to make it for Pi Day.  The filling is a delicious, it is just sweet enough and the spices are nicely balanced to taste like a classic pumpkin pie.  I took a shortcut and used store-bought pie crust but can definitely be replaced with homemade pie crust.

 

Alternatively, the filling can be divided between approximately 6-7 mini pies, see the notes section of the recipe for baking temperature and time for mini pies.  The crust of these mini pies is crushed graham crackers mixed with melted butter.

Pumpkin Pie

Servings 1 6" pie with remaining batter

Ingredients

  • Pie crust
  • 1 c (225 g) pumpkin purée canned
  • 1 egg
  • 1/2 c (118 mL) heavy cream
  • 3/4 c (150 g) brown sugar
  • 1 tbsp (8 g) flour
  • 1/2 tsp (2 g) cinnamon
  • 1/2 tsp (1.5 g) ground ginger
  • 1/8 tsp ground nutmeg
  • 1 pinch ground cloves
  • 1/4 tsp (1.5 g) salt
  • 1 tsp (4 g) vanilla

Instructions

  • Preheat oven to 425°F.
  • Grease and line a 6 inch springform pan with parchment paper. Press pie crust into bottom of lined pan and 1.5 inches up the sides of pan, allow to cool in refrigerator.
  • In a mixing bowl, combine all other ingredients and mix until combined. Pour batter into cooled crust.
  • Bake for 15 minutes. Then, reduce oven temperature to 350°F and bake for an additional 40-45 minutes until center appears just barely set.

Notes

  • If the crust or the top of the pie seems to be cooking too quickly, you can cover the top with foil to prevent burning.
  • Batter can be baked in a muffin tin at 350°F for 25-30 minutes.  Makes approximately 6-7 mini pies.
